Coffee beans are a natural source of antioxidants, which aren’t lost in the roasting and brewing process, although the levels do decline as the roasting time increases. Antioxidants fight cell damage by engaging with what are called free radicals at the molecular level. These are believed to contribute to cancer and aging, as well as other serious health conditions. While fresh fruits and vegetables are the most ideal sources of antioxidants, and vitamin supplements that provide antioxidants are available, coffee remains a top source of these molecules for adults.
